Who does not like tacos? Try this ultra-easy vegan version fill with grilled cauliflower, lime, crispy cabbage, avocado and salsa. In this recipe the roasted cauliflowers create a tasty and sophisticated taco filling.

The tacos are nothing less than the definition of the ideal meal. I like the convivial and festive aspect of the process of preparing and eating tacos. All we have to do is put the ingredients on the table and then have each person fill his taco.

Instructions
  1. Preheat to 400 ºF
  2. In a large bowl, combine olive oil with ground coriander, chili seasoning, cumin, onion powder and salt. Spread the bouquets of cauliflower on a baking sheet.
  3. Sprinkle with the oil mixture and stir to coat. Spread cauliflower in a single layer on the baking sheet.
  4. Roast cauliflower in the oven until the edges of the bouquets are golden and crisp, about 25 minutes - stir halfway through.
  5. Add the lime juice, the red cabbage and fresh coriander into a bowl. Stir.
  6. Place the Boston lettuce leave on a plate.
  7. Garnish each with roasted cauliflower, cabbage , avocado.
